Well there, that's a large hunk of butter!

2.5 pounds, to be exact, softened with the dough hook and ready for this week's Tips, Theory and Technique article on LAMINATION! It's a funny term, most notably associated with office presentations or A+ seeking grade school projects on the pyramids. In the baking world, however, it's the process of...well, read the article and you'll see.

We're GOING LOCAL in our Headliners section, with a bit of discussion on why we like to do some of the bakery's shopping as close to home as possible

Some more profiles have been added to the Secret Lives of Our Employees section, and I answer a couple more burning questions in Ask the Baker, and we introduce a new voice to the Blogletter, Baker John. Hide the children.
