We source our coffee from our good friends at Coffee By Design in Portland, Maine. We’ve known Mary Allen and Alan for years, and are constantly in awe of their work ethic as fellow small business owners. We developed three unique custom blends for use in our bakery, and they roast it every week specifically to our order. Check them out – we don’t know anyone more dedicated to both the local and global impacts of coffee harvesting, producing, roasting, and brewing.

In keeping with our “as much as possible by hand” policy, we have an authentic hand-pulled espresso machine. Unlike the super-automatics that you see at the chain stores, our machine relies on a well-trained barista to adjust the grind to the day’s environment, fill and tamp the portafilter consistently, pull the lever to allow water from the boiler into the piston, and make sure that their shots take 26 seconds to flow into the shot glass. Is it more complicated? Sure. Does it taste batter – we think so, and we think you will too.

Finally, because we’re obsessed with this stuff, we decided to forgo the commercial flavor syrups and make our own from simply syrup and pure extracts. We make our own chocolate sauce and caramel from pure ingredients, and we even developed our own Chai recipe. We brew it several times a week from freshly ground spices and Irish Breakfast black tea.

All of our loose-leaf teas are sourced from Mem Teas, in Cambridge, MA, and individually measured into tea bags as needed.
